Due to the organic fertilization of olive groves and the spring pruning of olive trees, Istra, one of the northernmost olive regions in the world, gives us a significant advantage in the production of premium olive oil that will delight your taste buds. The secret of our oil lies in the lower temperatures, which allow the olive trees a shorter growing season. Therefore, the olives start to ripen later than in the southern regions, after the period of high temperatures has passed, which ensures that the quality of the olive oil remains high. Our product is an oil full of intense flavor, intoxicating aroma, and elegant herbaceous notes. We are proud of our region and our indigenous varieties of olives.

Indigenous Istrian belica

We would be happy to introduce you to one of our best olive varieties – Istrian belica. According to oral information, this variety began to spread after a strong frost in 1929 and is now considered one of the most widespread varieties in this area. Of all the varieties, it is richest in antioxidants and is protected by the designation z.o.p (Protected Designation of Origin). In our olive oils, Bruno Peroša’s Cuvee (here), we use a blend of several varietal olives, in which Istrian belica has the highest percentage. In our store, you will also find a special olive oil, made exclusively from indigenous Istrian belica olives (here).

We have chosen organic farming because we want to preserve nature and provide healthy, organic food. In organic farming, we use natural fertilization methods, instead of artificial pesticides and fertilizers.

Thus, the ratio of olive varieties, the area of land, organic farming, pressing process, oil storage, chemical and sensory parameters of quality are under constant supervision, which allows traceability of the high-quality protected final food product.

Light

The way of storage is extremely important because of UV rays. To avoid light that would affect the quality of our olive oil, we store it in stainless steel containers.

Temperature

The storage is in a room at a constant temperature of 16C.

Oxygen

In steel containers, we store the oil under an inert gas, which prevents oxidation.

Bruno Peroša Oil Mill

We would like to introduce you to our Bruno Peroša Oil Mill, which has been in operation since 2000. Over the years, we have upgraded and modernized the mill to ensure the highest quality of our products. We process olives continuously in the line of the Italian manufacturer MORI TEM s.r.l Olio-mio, which is known for its prestigious advanced products for olive grinding. The pressing of olives is done by the method of ‘cold pressing‘, which means that we obtain olive oil at a temperature below 27 degrees Celsius by filtering or centrifuging the olive pomace. This is crucial for obtaining extra virgin olive oil, which we proudly produce. Olives directly picked from the trees are immediately processed in the mill, allowing us to maintain the supreme quality of our olive oil.
